Where are sended and received mail logs???

Have a look in /var/log
There is some information in /var/log/messages when a smtp connection is made.
Also in /var/log/secure when a pop connection is made to the server
also in /var/log/qmail there are several files with info about incoming mail. The filenames are a bit cryptic but they contain a lot of detailed information
