In my soon-to-be server computer, I have 3 hdds: an 8gb Maxtor, an 6.4gb Western Digital (peice of dirt), and a Maxtor 80gb drive (on the freebie PCI ATA-133 controller that came with another Maxtor drive).
Now, if I install SME, will it take advantage of all these drives and allow me the full 94gb of storage (minus swap and other misc stuff), or does it park on one drive and stay there?

You will need to install on one drive then manually configure and add the others.

How do I go about that?

Search the forums for "second hdd" and other phrases like that. Others have brought this up many times before.
If you searched back far enough, there was one post giving nearly every step you need to add the additional hard disks to SME.
