When you set up a virtual domain, I know about the setting to have e-smith listen for the proper domain and send the correct website, however does this hold true for mail. And Webmail. Can it deliver and accept mail for the different hosted domains?

This happens automatically when you create a virtual domains.
There is one user community, so mark@domain.one is the
same as mark@domain.two, etc.

What if I want to have seperate names?
You say name@domain.1 is the same account as name@domain.2.
What if I have sales@company.1 and sales@company.2 Can e-smth with the virtual domains. Order mail to the two accounts seperately?
We already have a sales account and our sister company with their ow virtual domain needs a sales account also. Or do I need to rename our accounts to salescompany1 and salescompany2??
I ahven't tested this yet - still in massive server redirection! But I assume their is no hassle with my esmaith box hosting virtual domains for main and my DNS server points mail to this box. But normal connections will go to my other red hat box with a virtual hosting apache.... I don't want to use the IBAYs or esmith as a web server. Trying to keep it as firewall as possible. I am being naughty and only running mail on it!
