hi new sme server user, new to linux ish,

i am the proud owner of e-smith 5.6 server but what i want to know is how would you use apache?? and set up folders and so forth, ne one know ne decent guides on setting up and using and mataining the e-smith server i would be very happy.

Start with the "official" manual for your version.

Where are topics on configuring ibay for web serving and step by step instructions.
Apache is a webserver providing this functionality and you don't have to interact with it directly for basic use.
SME hides this (configuration) steps from you and replaces with easy for unexperienced user interface.

Read teh apache man pages etc go to the apache web site ?

When you say 'get to grips' what exactly do you want to achieve ?

i would like to get to know most of linux if not all how to make my own system from the kernal and fully customise it in the end but one step at a time, lets just play with the server for now!

For learning I would start with (any) generic distro and any books/manuals for apache and Linux in general.
Once you learn how it works on the test server, add this knowledge to SME specifics (templates).

For learning linux - I would suggest some thing like Core linux

If you really want to punish yourself
 
Or Slackware using only the A,D,K and N packages.

If you want an easier run go for Fedora and the likes.
