Where can I turn off unwanted services like squid etc?

I have the same problem, I am testing a server and I have some additional networks who are using some of the services provided by the E-Smith server.
My problem is that I want to disable squid access to the additional networks but I still want to be able to use it on my regular network. The other networks will only be using FTP and mail.

Any hints where I might find a way to disable squid access to all networks except 192.168.x.x ?
