please let me know, where to set which language options to use a german keyboard layout.

Logon to the console as root, type "kbdconfig"
the one I use is "de-latin1-nodeadkeys"

Editing the file /etc/sysconfig/keyboard and setting KEYTABLE="de" should be enough to permanently configure a german keyboard layout.
