Well, after not getting a reply here I decided to go out on a limb and try and resolve the issue.  What I did:
reinstalled v5, restored from recent backup, problem returned.

reinstalled again and created everything from scratch, everything was fine until I installed IP Port Forwarding, then problem returned. Removed IP Port Forwarding, reboot and the problem seems to have gone away again.

Any idea's what may have been the problem.  When I was using the port forwarding I had forwarded TCP ports 1024-1030, 5440 & 5441 and 8888 to other machines on the lan, didn't think that would cause any problems.  And, port forwarding had been installed for a week or so before the DNS problem showed up.

Totally confused now.....

Well, you're not alone.

Since yesterday my SME server is doing something similar. After powering up, DNS will work fine for a while (less than 30 minutes). Then suddenly any DNS request will fail. Unlike you I don't have any port forwarding set up.

 I can't find anything unusual in /var/log/messages or one of the other log files. A Windows Me machines that dials into the same ISP with a different account doesn't have any problems at all resolving addresses.

I've run SME Server for months without any problems. It gets shut down and restarted at least daily because I'm on dialup and it doesn't make sense to have the machine powered on if nobody can use it.

It now looks like a network upgrade at my ISP is to blame for my problems. It turns out that my connection started losing about 50% of packets after a while, and failure of DNS resolution was just the most obvious symptom.

Anyway, they fixed their problem and SMEServer is working just fine.
