I'm not sure of your level of expertise, but you might look at an old how-to I put up a year or more ago:
http://www.e-smith.org/docs/howto/contrib/e-smith_adaptec_raid.htmI don't know about the differences between the 2100 and the 2005, but the trick is to use e-smith 4.1.2 and the Adaptec drivers for Red Hat 7.0.
