Is there any way i can add more directories to what it makes a backup of? im quite happy with what it does now, but i do have a few extra things i would like to get included.... any help?

I assume you question is referring to the default Backup to desktop function in server manager.

You could try using Darrell Mays backup2ws rpm available from contribs.org.
It will allow you to specify which directories to include (and to exclude also).
