Is there a possibility to forward alle incomming and outgoing emails to 1 emailaddress?
This will be used as a backup account to log all messages.

I hope somebody can help me.

You could create a group make all your users a member of that group, then forward email to the group name, not tried it myself so might not work as you wish.
