Hi,

I'm about to go and by a domain name. Now when I get the domain name, they will ask me what the address of my name server is. Can I just point this at my static IP address (does SME run a name server) or do I have to point it to a name server and then back to my box?

Preferably you should register your domain name at a party that is also able to host your name servers.
If you want to host your own name servers, you would have to make the dns service of your SME box public, which is not default. In addition to that you will have to provide a second name server.

Personally I registered my domain name (.com domain) at a company for $8.20 a year and I have full dns control. The name servers for my domain are two dns servers of this company. That's all you need!  :-)
