I'd be gratefull for some help if anyone has the time:

I have 35 machines running SuSE 9.2 and ideally, I would like to have an Application Server dishing out OpenOffice2 etc... so that I can spend my time doing far more useful things!  
  Can anyone explain how I could use SME Server as an Application server for these apps?  Since I have never done anything like this before, would 3 Ethernet cards provide sufficent "breathing rooom" during high traffic loads?

What exactly do you mean by dish out applications?  Are you intending to run the apps on the SME server and use remote xsessions or install to the SME server and run the apps off a drive share?

Correct me if I wrong, but adding a third network card is not impossible, but can be difficult with the template system in place for SME.

Dmac,

  A third NIC is nice, but Gigabit Ethernet would really do the trick.  Then you just need to worry about a fast enough set of drives to keep up.

  I haven't tried this method of serving applications on SME, and the last time I tried it at all I learned that RAM was also very important.
