Yes, VMWare v3 seems to be pretty good at this.

For what kind of information? Obviously, running SME under VMWare in a production environment is a *very* bad idea. If you're looking at setting up a production server, get it it's own machine - the hardware requirements are *very* low - it's not worth the hassle.
For an experimental server, a VMWare implementation is ideal. You can backup the entire server by copying the HD image file(s), and restoration is a snap.
