Should be fairly easy. Take out your second disk, edit the raid configuration files in /etc to tell it there is no raid (can't remember exactly what files).
Then put your first disk on the 3ware raid controller and make sure it's working properly.
Once you're happy, you can put the second disk in, press alt-3 or whatever it is to get into the 3ware bios, and tell it to create a mirror from the first disk onto the second disk. It will start rebuilding, you can exit the utility and start up your server and let it keep going.
If you install the 3adm tool, you can go to
http://servername:1080 and control the raid array from there.
