I tired that mutliple times and still the "old" lists show up when I reinstall.

Look in
/home/e-smith/accounts
the mailing lists are probably still there.
You need to remove that information if the uninstall process does not do that.
After uninstalling & deleting everything in
/home/e-smith/files/ezmlm
do
signal-event post-upgrade
reboot
to see if that empties the database of those entries.
If not then manually delete them and do another
signal-event post-upgrade
reboot
then do a fresh reinstall again
...
