These are all system defaults based on your choice of server name and domain name. You cannot change them as such, but you can change the server name or main domain name by logging in to the console as admin & selecting Configure this server, as you did when you first setup the sme server. I don't see anything wrong with your current Review Configuration settings, they are quite typical.

All email addresses are in the form username@domainname, they cannot be anything else, although other valid possibilities on the sme server are groupname@domainname and pseudonymname@domainname
The useraccount & user name are the same thing eg a user that you setup in server manager.
Where you have configured sme server to be a domain (or workstation) controller, you would logon to workstations that are part of the domain using the same user name, which is authenticated against the users in sme server.

They cannot either unless they are part of the local network. You can add their remote IP to the Remote Access panel, or they can VPN to your server and then they will be able to use
https://yourmaindomain/user-password/ I suggest you look at (& install) the user manager contrib from dungog that allows limited access to a cut down server manager type panel (called user-manager), which includes a password changer function. You may still need to "allow" access for remote users though, as mentioned above.

and enable ONLY secure access in the Email panel.
