I put the disk in, got the initial screen with two cryptic choices and then my horse all went by itself and ended with

I assume you've just installed SME7 and see that the start up is different to SME6. Is that right?
If so, my guess is that the two cryptic choices were SMP and UP (I think). This is the kernel to run. SMP is for multi-processor support. UP is for single processor support. Once you select one, its remembered for future reboots, so you don't need to choose again.
Earlier versions of SME would log in and display the Server Console screen. This not the case on SME7. If you log in as user 'admin', you will see the Server Console. If you log in as root this is as before.
Of course, you probably don't need to log in at all. Once you see the login screen, the server is up and running, so connect to it using server-manager (
https://your-ip/server-manager) and you can probably do all you need from there.
Don't let this initial impression put you off, SME7 is well worth a look (IMO).
