Can't find any deeper logic to this method
Any way to partition harddisks manually during installation ?

hi
SME is a server class linux distribution and is meant to be the only O.S. installed.
please, read the manual and... no, there's no way to change this behaviour.. it's a feature.
now, please, explain your problem

If you just want to have a play you can use the
SME Server virtual machine
with the free VMWare Player.

You could install the sme OS with only one disk connected, then add more disks later and format them as required.
