If you run an install of sme5.1 on a system with two HDDs you will be offered software RAID as an option automatically - only RAID-1 is allowed. Best practice would indicate that setting up both drives as the master on an IDE channel is the way to go but I used both on the same channel and it works fine.
There have been one or two issues with this system under sme where the full capacity of the drive mirror was not obtained - look back through the forum for answers - but with two good drives, and a BIOS with no drive size problems, RAID-1 is basically foolproof and dog-reliable. My own measurements on a Pentium III-550 using the built in IDE controller and two Quantum 20GB drives showed about a 2% performance hit - well worth paying for the peace of mind.
