Hi, just downloaded and installed SME 7.4 - what a breeze :-)

One question... how/where do I enter details of an 'external' proxy server which I have to get through in order to access the outside world from my SME server ?

There is a lot of published information in existence, and you would do well to read all of the FAQ and the manuals which are linked at the top of these forums.
Please search before asking, an answer may already exist.

Is it possible to set this up so that specific dhcp clients use this external proxy?

Proxy settings are usually application-specified. AFAIK they can't be handed out over DHCP, although I could be wrong.

Many thanks Mary.  I would probably have found this in the documentation if I'd looked for "upstream" rather than "external" :)
