These don't come from server history, but mostly from email client history.
Each different email client (Outlook, Thunderbird, Webmail) uses different folder names for sent mail, junk mail and deleted mail by default, and many of them are also configurable by the user (so you might get extra folders by mis-typing 'Sent Items' into thunderbird as 'Sent items', for example).
Any folders you need will be re-created by the mail server. To clean up, just save the emails you want to save and delete the folders you don't like.
If the folders come back, you probably have an email client configured to use that folder; to make it go away and stay away, you will need to reconfigure the offending email client to use one of the folder names that you want to keep.
