I'm considering setting up a server using an MSI Wind PC, which is based on an Intel Atom motherboard.  Unfortunately the motherboard only has 2 SATA connectors.  My plan is to connect 1 hard drive and a CDrom to the SATA connectors and install SME Server.  After installation, I would disconnect the CDrom and connect a second hard drive to set up raid 1.  Will this sequence of steps work?  Any insight would be appreciated.

I think so..

be sure nic chipset is supported (check it in Centos 4.x HCL and here)

Thanks for the reply.  I've seen a few success stories where people were running CentOS 5.2, so it looks like the hardware is supported.  I may need to grab a separate driver for the nic.  I'm mainly concerned about setting up the mirror drive after installing SME.

SME 7.4 is based on  CentOS 4.7.. are you going to install SME 8 beta?

No I don't intend to install the beta, so I may need to rethink my hardware selection.

You might try beta3. It is based on CentOS 52. and it does support the r8169 NIC. On my asus eee box it's running smoothly, feels just like a 7.4 system.

it's not necessary

RAID1 is always created even if there's only one hd..
you have only to connect the second one and add it to the raid array via the console

 Yup documentation is usefull IF things work that way, however I tried it several times before on several servers I've configured and the doc part that reads " It should tell you there if the drives are syncing up " doesnt, it says " Manual intervention needed " . maybe its the hardware used, dont know, dont care. All my servers have Intel boards and widman is trying it on an Intel board, hopefully widman has better luck with this.  :P
