I'm not referring to using a local mail server.
I'm saying you can continue to download mail using POP and simply change the location that your email client saves data to eg Outlook Express, Windows Mail, Thunderbird.
That way you can have as much data (ie email files) saved locally (on an ibay on the server) as you wish to have without limits or restrictions.

I do not see the need for this, when you say that you only want the server to function during certain hours of the day. You are adding a layer of complexity that does not gain anything.
Just keep using POP download, but change where the email client data is saved.
