I’ve used MS Outlook with IMAP servers for years w/o problem, indeed that’s entirely how I use it at home. There were some “quirks” in the early MS Outlook IMAP configurations but those aren’t an issue anymore. Indeed as far as IMAP clients go MS Outlook is pretty much the same as all others from the server viewpoint.
MS Outlook does synchronize its IMAP folder(s) on a regular basis in order to detect new messages and that might be the churn you’re referring to. This interval can be set within MS Outlook and can be restricted to only subscribed folders. This synchronization process is integral to identifying new email and is required of all IMAP clients.
As to MS Outlook being bloatware, well, it *is* a big integrated hawg of an MS client. On the other hand lots of folks prefer it over other clients in spite of its warts, even sans an Exchange server. It is a remarkably good email-client/contact-manager/scheduler; head and shoulders above most of the rest in terms of all of those capabilities in one program.
