The backup process how to is ok. Now i would like to know how to log this backup process.

please, define "how to log"..

if you mean "how to be informed about backups", just read admin/root's emails

is this an entry of backups in log file? I found in the "messages" of log files menu of the sme server.
But I have not configured email service. Thus i will not able to read admin/root emails.....

As long as the server has access to an Internet connection (set this in Configure this server) or is on a LAN where there is an active mail server & the email address is recognised locally, then you can open server manager, go to User panel, and configure the admin user with a valid email address that you want system mail (eg root, admin, cron & so on) to be sent to. You might also want/need to set the ISP's mail server as outgoing smtp server if you use one already, set it the same as your main sme server.

This is really one of the first things you do when you set up a sme server, you need to monitor system email for many many reasons.

Alternatively you can enable webmail on the server & just log in locally to the web interface for webmail & login as admin with the admin password, in order to read admin emails.
eg

or
http://localLANIP/webmail
ie http://192.168.1.2/webmail

Note also there are add on contribs for webmail for a more dynamic look & for a minimalist mobile use ie MIMP & DIMP,

just edit Admin user and forward its emails to an external email address

Or make a group (like "server_alerts") and add the users to that group who you want to get notifications. Make sure to update the "Admin" account e-mail to forward to the group you create (example: server_alerts@mydomain.com).

backupwk key supports 2 related keys:

FromMail (default 'admin-backup')
ToMail

setting ToMail to an user/group account will do the magic
