Shutting down un-needed services

I've been around Linux for a while, but haven't gotten real deep into it. What's the best way to shut down un-needed services (such as pop or imap) on the freshly installed 6.0 beta 3 machine?

Hello,
There is a contrib that done that job e-smith-service-control-1.1.0-06.noarch.rpm
It's add a new interface into server-manager and allow you to disable service.
