All you need is to set 'server-manager > E-mail retreival > Delegate mail server' to your Exchange server IP address.
The SME server in server-gateway mode is the incoming and outgoing smtp server and simply forwards incoming to Exchange for final delivery. Set the Exchange outbound smtp server to the SME server IP address.
In default mode the SME server permits all internal and local defined networks to use smtp. As long as your Exchange server is on one of your defined internal/local networks, everything will work just fine.
